Antipasti Skewers

Makes About 2 Dozen

3 Home Roasted Red and Yellow Peppers sliced into 24 strips
7 oz. Log of Salami or Summer Sausage; cut into 24 cubes
8 oz. Provolone Cheese; cut into 24 cubes (Any Semi-Hard White Cheese would work like Fontina or Farmer’s Cheese)
*2 – 6.5 oz Jars of Marinated Artichoke Hearts, drained and cut into quarters; need a total of 24 pieces of artichoke
24 Mediterranean Style Marinated Green Olives without pits; you can get these at the olive bar at most grocery stores.  If you cannot find marinated green olives, regular Green Olives in a jar work great too!
Fresh Lemon
Red Pepper Flakes
Salt & Pepper
Extra Virgin Olive Oil
**24 – Skewers

Directions For Roasting The Peppers

1)  These can be roasted at home 3 different ways.  1 – If you have a gas stove turn the burner to a medium high flame and place the peppers directly on the burner.  Rotating until all sides are black.  2 – If you have an outdoor grill you can place the peppers directly on the grill over a fairly hot flame.  Rotate until charred. 3 – You can achieve the same effect under the broiler.  Simply keep a close eye on them!  No matter which method is used, once the peppers are charred place them in a large bowl and wrap with plastic wrap very tightly.  Let them steam for about 10 – 15 minutes.  At this point you can easily slip the peppers out of their skins.  Remove all the seeds and white pit from the inside.  Cut the peppers into about 24 thick strips.  Put into a bowl and drizzle with about 2 Tbsp of Olive Oil and Sprinkle with Salt and Pepper.  Lightly Toss.

Directions For Assembling the Skewers

1)  With these skewers I find it fun to alternate which item starts the skewer.  The only rule to really follow is that the Artichoke Heart should always be in the middle, never the first or last item on the skewer as it needs something stronger on each side to hold it on the stick!

2)  Place the finished skewers on the platter and serve!

*  After Draining the Artichoke Hearts taste them.  If they taste too acidy toss them with a squeeze of Lemon Juice (about 1/2 a lemon) drizzle with a bit of Olive Oil, Red Pepper Flake and Salt and give them a quick toss.

**For Skewers use a skewer that is about 3″ – 4″ long.  They can be made on longer skewers but you will need more ingredients to make 2 dozen*

Attention Vegetarians!  This recipe can easily be made vegetarian by omitting the salami and substituting marinatde whole button mushrooms!  These too can be found in the self-serve salad section of most super markets or along with the pickled veggies.  Like with the artichoke hearts taste them before skewering and season with Lemon Juice, Red Pepper Flakes, EVOO and Salt to give them a bit more zing! You can make your own mushrooms too, but I’d like you to be able to do as little cooking as possible for these easy apps!
