Pimento Cheese, Prosciutto and Pepper Jelly Grilled Cheese

1 Sandwich

2 Slices of Prosciutto
1 tsp. Olive Oil
2 Slices of Sandwich Bread – I go with good ole fashioned white bread here!
2 – 3 Tbsp. Pimento Cheese Spread (see recipe below)
2 tsp. Pepper Jelly
1 Tbsp. Mayonnaise

Directions
1. Heat olive oil in a small skillet and add the prosciutto, cook until it has become a little bit crisp. Remove from pan and place a paper towel lined plate to drain the oil.
2. Lay out your bread slices on a cutting board. Spread one slice with Pimento Cheese and spread the other slice with the Pepper Jelly. Next top the cheese side with the prosciutto and top it off with the jelly slice.
3. Spread a thin layer of mayonnaise on outside slices of bread and preparing your frying pan.
4. Heat a non-stick skillet over medium-low heat for a couple of minutes. Once hot add the sandwich to the pan. Cook until the first side has become golden brown and then flip it. Cook the second side until it too is golden brown and the cheese in the center is warm and melty!
5. Remove the sandwich from the pan. Allow it to cool for a minute, then slice and serve! Eat the sandwich with a bowl of Tomato Soup you will not be disappointed.

Pimento Cheese Spread
Makes 5 Cups

16 oz. Sharp Cheddar Cheese, Shredded
8 oz. Monterey Jack Cheese, Shredded
3 Tbsp. Mayonnaise
8 oz. Mascarpone Cheese, warmed to room temperature
2 tsp. Minced Garlic
3 Tbsp. Dijon Mustard
½ tsp. Celery Salt
2 Tbsp. Hot Sauce, like Chaloula
2 tsp. Worsteshire Sauce
½ tsp. Salt
½ tsp. Black Pepper
2 Tbsp. Granulated Onion
2 – 4oz. Jars Pimentos, Drained

Directions
1. Using the grating blade on your food processor, or a boxed grater, shred the Cheddar and Monterey Jack Cheese. Empty the cheese into a bowl.
2. Insert the regular blade into the food processor and combine the: Mascarpone, Mayo, Garlic, Mustard, Celery Salt, Hot Sauce, Worsteshire, Salt, Pepper and Granulated Onion until combined.
3. Add the grated Cheddar and Monterey Jack Cheeses into the Mascarpone mixture, along with the drained pimentos. Process for about 10 to 15 seconds and then pulse a few times til all the ingredients are combined but it still has some texture and the pimentos are spread throughout the dip.
4. Empty the contents into a storage container and put in the refrigerator until ready to serve.

Pimento Cheese Spread can be served with crackers, veggies, chips, spread on sandwiches, you name it! So, needless to say having a big batch around is NOT a problem, however, if you think 6 cups is too much you can go ahead and half the recipe very easily!!
