Tex-Mex Chicken Chopped Salad

Salad Ingredients

3 Cups Chopped Romaine Hearts
3 Cups Chopped Red Cabbage
2 Cups Diced Chicken, leftover or rotisserie
2 Cups Chopped Bacon
2 Cups Corn Kernals (Fresh, Frozen or Canned)
1 ½ Cups Canned Black Beans, drained
1 Pint Grape Tomatoes, sliced in half
1 ½ Cups Red Bell Pepper, sliced
1 Cup Green Onion, sliced
2/3 Cup Cilantro, chopped
¾  Cup Cubed Cheddar Cheese
¾  Cup Cubed Pepper Jack Cheese
½ Cup Spicy Pumpkin Seeds
Crushed Tortilla Chips

Salad Dressing Ingredients

½ Cup Fresh Lime Juice
2 Tbsp. Honey
1 tsp. Cumin Powder
½  tsp. Chili Powder
¼ tsp. Cayenne
1 tsp. Salt
2 Tbsp. Apple Cider Vinegar
½ Cup Vegetable Oil
Black Pepper, to taste

Directions

Start by making the salad dressing, this way the flavors can come together while you are making the salad. In a small mixing bowl, or a jar add the salad dressing ingredients in this order:  Lime Juice, Honey, Cumin, Chili Powder, Cayenne, Vinegar and Salt.  Stir, or shake, the ingredients together well until you see that the salt and the honey have totally dissolved.  Next add the vegetable oil and whisk vigorously – or shake the jar – until the dressing has nicely combined.  Set it aside.

Prepare all of the ingredients as listed in the ingredient list above. Be sure that if you are using canned corn and canned black beans you drain them and pat the dry as well as possible. When all of the ingredients are prepared add everything except the tortilla chips into a large mixing bowl. Add half the dressing and toss with your hands (the best tools) or a large tongs. After a good toss, mixing all the ingredients throughout the salad, taste and see if more dressing, salt or black pepper need to be added to the salad.

Once the salad is ready pour it into a large serving bowl, or, onto individual plates and top generously with the crumbled tortilla chips.

MAKE AHEAD
This salad can be made ahead for the week, simply keep the dressing on the side! When meal time hits all you have to do is toss it with the dressing and you are ready to go!!
