Upper West Side Chopped Salad

Salad Ingredients
6 Cups Chopped Romaine Hearts
1 Pint Cherry Tomatoes, sliced in half
2 Cups Cucumbers, diced
1 ½ Cups Celery, diced
2/3 Cup Red Onion, diced
1 Cup Roasted Red Peppers, drained and diced
1 Cup Kalamata Olives, Sliced
2 Cups Canned Chickpeas, drained
1 ½ Cups Feta Cheese Crumbles
½ Cup Grated Parmesan
2/3 Cup Fresh Basil, sliced
1 ½ Cups Croutons

Salad Dressing Ingredients
¼ Cup Fresh Lemon Juice
¼ Cup White Balsamic Vinegar
1 tsp. Salt
¼ tsp. Dijon Mustard
¾  Cup Vegetable Oil

Directions

Start by making the salad dressing, this way the flavors can come together while you are making the salad. In a small mixing bowl, or a jar add the salad dressing ingredients in this order:  Lemon Juice, White Balsamic Vinegar, Dijon Mustard and Salt.  Stir, or shake, the ingredients together well until you see that the salt and mustard have totally dissolved.  Next add the vegetable oil and whisk vigorously – or shake the jar – until the dressing has nicely combined.  Set it aside.

Prepare all of the ingredients as listed in the ingredient list above. Add everything into a large mixing bowl. Add half the dressing and toss with your hands (the best tools) or a large tongs. After a good toss, mixing all the ingredients throughout the salad, taste and see if more dressing, salt or black pepper need to be added to the salad, adjust if need be.

Once the salad is ready pour it into a large serving bowl, or, onto individual plates and serve.

MAKE AHEAD
This salad can be made ahead for the week, simply keep the dressing on the side! When meal time hits all you have to do is toss it with the dressing and you are ready to go!!
